Green Chile Chicken Healthy Meal Prep Heather, October 1, 2024October 1, 2024 There is a single serve freezer meal at Trader Joe’s that my husband and I buy in repeat. Their green chile chicken bowl tastes great, has 320 calories and 22 grams of protein. Down side, its like $5 a serving and while thats great sometimes, I can do it better. I am absolutely obsessed with super easy, one-dish meal prep meals. Throw everything in one dish, pop it in the oven, and you have a very affordabe week’s worth of lunches ready to go. Another perk these are co customizable. You can increase your protein, increase your carbs, make it spicier or more mild. It’s really up to you. I gotta warn you, I keep my measurements a little loose because honestly it doesn’t really matter. These are the oven-safe containers I use. Here is my recipe for 4 servings: 8 tablespoons jasmine rice (2 TBSP per dish) 16 oz raw chicken breast (4 oz per dish) 1 cup chicken broth (1/4 cup per dish) Hatch Green Chile Salsa (any salsa will do honestly) dash taco seasoning salt and pepper to taste Divide all of these ingredients evenly in each oven-safe dish. This is where you can add more rice if you want a higher calorie, higher carb meal. Just make sure your rice to broth ratio is about 1 part rice to 2 parts broth. Give it a little mix and toss all the dishes in the oven on a baking sheet at 350 degrees for about 25-30 minutes. You will know its done when #1 your chicken is cooked through, I temp check to make sure we are at 165 degress in the biggest chunk of chicken in whatevere bowl I pull out. #2 whe your rice is cooked through. AFTER the oven finish with: 8 TBSP plain Greek yogurt (2 tbsp per bowl) 8 TBSP cheddar cheese (2 tbsp per bowl) 1 lime cilantro Once it has cooled a little, finish each bowl with greek yogurt, cheese, a squeeze of lime and a pinch of cilantro. Each bowl is just under 400 calories, 42 grams of protein and around 23 carbs. Uncategorized
